I am answering my own question. It was Human Weapon that aired on the History Channel. One former MMA fighter and a football player travelled the world and would study a style of martial arts over a couple of weeks. At the end of their training they would challenge one of the students of the art studied to a match. This show allowed you to see styles you might not have heard of including their history and training methods. They even used an animation to show what the different techniques do to the human body's bones and muscles. One of my favorite shows was the training given to the Israeli Secret Service (Massad) to combat terrorists in hand to hand and weapons situations.
