Okay, so I'm having trouble finding a quality vegan or vegetarian meat replacer for pork. Back before I became a veggie, I used to cook this awesome Mexican dish called Puerco Pibil and it required 5 pounds of pork rump (which seems absolutely disgusting to me now, LOL!) and I can't find a single vegetarian substitute. Any ideas?

:) Man I wish I knew - and I bet my son does too- he loves pork. Alas, I am clueless- going to whole foods today and will ask around though!

Thanks, it's a tricky one, that's for sure. Chicken and sausage are fairly easy to find vegetarian substitutes for but prok, not so much.

@Count_Orlok_22: My vegan friend says Asian markets sometimes have veggie pork products in cans. He can't remember the name, but he said it comes in chunks. If you're going for Puerco Pibil, I'd suggest reducing the cooking time, since it's slow cooked primarily to breakdown and tenderize the meat. I doubt you'd need that with a substitute.
