One of the great pleasures of life, in addition to catsup, anchovy pizza, dulce de leche ice cream and genoa salami, is that all-American dish, baked beans. I often dream of baked beans, especially my version.

Fry four or five pieces of bacon and then wilt some chopped onion in the fat. In a baking dish open a couple of cans of drained pork and beans (and whatever happened to the pork nowadays?) Add onions, brown sugar, plenty of molasses, dry mustard, mild vinegar and catsup. Don’t worry about such details as quantities. The result should be dark, soupy and sweet. Layer on top the bacon and push down so they are covered. Put in a 375 degree oven and let bake until the beans are sticky and not quite runny. This will take an hour or more. Remove, cool and then serve. The usual presentation is to coat a slice of soft white bread with butter, spoon in the warm beans and a slice of bacon, then fold over the bread so you can eat with one hand while watching Masterpiece Theater or fights in the octagon..
