Not to brag or anything, but my mashed sweet potatoes are pretty bomb diggity! Holiday side dishes and desserts are my specialty, so it's no wonder my family puts me in charge of them every year. There's one rare dish, though, that is a hybrid side dish/dessert and comes in the form of.... mashed sweet potatoes.
Sweet potatoes are already great on their own. Mash 'em up and it's even better. Add tangy ingredients and spices to it, though, and it simply becomes ~*magical*~.
Most traditional recipes just call for sweet potatoes, butter, a liquid like milk or cream, and a sweetener like brown sugar or maple syrup. After learning of different mashed sweet potato recipes over the years though, I've learned to adapt aspects of several recipes and make it my own. Namely I've been adding fruit like oranges and bananas, and spices like ginger, nutmeg and a splash of vanilla extract.
Here's the recipe that I've ultimately come down to. You can adjust all the ingredients to your liking. This isn't making a cake; it's just mashing up a bunch of ingredients together, so be as liberal as you want with, say the bananas or the sweeteners. Whip 'em up for your guests this holiday for some fluffy mashed sweet potatoes that will literally melt in your mouth!
5 large sweet potatoes, peeled and sliced
1 stick of unsalted butter, room temperature
2 bananas, sliced
2 juiced oranges, or 1/2 cup of orange juice
Optional seasonings (I use 'em all!):
1 of these sweeteners: 1/2 cup of either brown sugar, maple syrup or honey
Whatever you have around the house that you think would be good for this :P
Directions: Boil the sweet potatoes until tender, then drain and reserve. Melt butter in a pot and add in your sliced bananas. Cook for a few minutes until the bananas are mushy, then add the orange juice. The moment you get that boiling would be a good time to add one of the sweeteners if you please. Toss in the reserved sweet potatoes and mash everything together, then stir in all the seasonings to taste and top with your toppings of choice.
