Looking for something quick and easy to make to bring to your next family gathering? May I suggest Pumpkin Mousse Pie. This is a light and tasty dessert that is quick and easy to make. I had an opportunity to sample it for the first time a couple of weeks ago and although I am not a huge fan of pumpkin flavored anything I absolutely loved it! You will note that this recipe calls for a number of fat-free or reduced fat ingredients so it will definitely not pile on the calories. I found the pumpkin flavor to be light and pleasing and no where near as strong as a regular pumpkin pie. As I said I really enjoyed it and look forward to having it again. With the holidays just around the corner I thought I would pass it on to you. And the best part.....NO BAKING NECESSARY!
PUMPKIN MOUSSE PIE
1 1/4 c cold skim milk 1 pkg (4 serving size) Vanilla Fat-Free, sugar-free instant pudding 1 tblspn Pumpkin Pie Spice 1 can pumpkin 1 tub (8 oz) frozen Reduced Fat Cool Whip (thawed and divided) 1 Keebler Reduced Fat graham cracker ready crust.
In large bowl beat milk, pudding mix and spice with wire whisk for 1 1/2 minutes. Now whisk in pumpkin. Fold in half for the thawed Cool Whip. Spread in crust. Top with the remaining Cool Whip. Refrigerate at least two hours. Store in refrigerator.
Voila.....a quick and inexpensive holiday treat to bring to your next office party, church supper or family gathering. You'll love it and so will everyone else. Highly recommended!
