Quick and light dinner with an Indian kick!

So we've officially moved the microwave out of the kitchen (long story), but that doesn't mean I can't make (or heat) a quick 10 minute dinner. As you all know well, I am a great Trader Joe's camper - I mean fan. A few months back I discovered Trader Joe's Biryani Rice and instantly fell in love. The ten minutes includes the time to open the freezer, open the package, place contents on tray, set time, and heat until ready in toaster oven. Dinner for two served! Here are also some great ideas for  a quick meal with Biryani as base:

  • Saute with some cooked chicken
  • Add cooked shrimp and you've got a seafood dish
  • Bake/slow cook lamb in pots and add Biryani in the last 8 minutes for dinner with a twist (well, no so quick but delicious)
  • Serve with an Edamame salad
  • Top off with some  Cranberry Sauce with Pomegranates and Ginger for an even more exotic kick

Ok, so this isn't your homemade authentic Indian Biryani - so if you've been spoiled you might not like it as much as the real stuff. But for me, a Russian girl who tried Indian food for the first time in the States at an International Club in college, Trader Joe's hits the spot once again with their Biryani Rice dish. The delicate sweetness with just enough spice is so playful on the palate. I am not a fan of spicy food, but this is so well balanced that even I enjoy it. Not to mention that the ingredient list is oh so simple and unadulterated (check out the wiki). 

Great for:

  • Quick lunch or dinner for two (or one if you eat a lot)
  • Base for curry dishes
  • Vegetarians
  • Microwave or toaster oven (skillet if you are not lazy)
  • Dorm dwellers
