The green Bean, chicken & tortilla casserole recipe is an alteration of the popular green bean casserole dish. Unlike a normal green bean casserole, however, this recipe uses meat and tortillas and also includes cheese. It does not use fried onions.

You will need:
  • One 10 3/4-ounce can of cream of mushroom soup
  • One 14 1/2-ounce can of cut, cooked green beans
  • One chicken breast, approximately 8-12 ounces
  • Two or three tortillas
  • 1/4 cup milk
  • Grated cheese (your pick)
  • Pam
  • Medium-sized casserole dish
  1. Preheat your oven to 350 degrees (or 300 degrees if using a convection oven).
  2. Cut the chicken breast into small bits and cook completely over a stove until lightly golden. Set aside.
  3. In a large measuring cup or small mixing bowl, combine one can of cream of mushroom soup, one can of cut, cooked green beans, and add milk. Mix well and set aside.
  4. Cut two or three tortillas into 1-inch thick strips (horizontally). Spray casserole dish with a light coating of Pam, and lay down tortilla strips to fully cover bottom and sides of casserole dish.
  5. Pour half of the soup/green bean mixture onto tortilla strips in the dish. Then add cooked chicken breast bits, and layer with the remaining soup/green bean mixture. Sprinkle with grated cheese of your liking.
  6. Layer more tortilla strips on top to completely cover the mixture. Sprinkle a little more cheese on top of the tortilla strips.
  7. Place the casserole into the oven and heat for about 20 minutes or until top layer of cheese is slightly golden/crispy. Remove from oven and allow the casserole to cool for several minutes before serving.
Depending on your serving sizes, this casserole can serve between 2 to 4 people.

Cheap, fast, delicious, and hearty.

I love this recipe. My piano teacher first shared it with me several years ago, but her version included salsa and fried onions. I didn't think they went well with the overall flavor and texture of the main dish, so I took 'em out and just left it with the tortillas, chicken, green beans, cheese, and cream of mushroom.

I've made many other casseroles, but this one in particular sticks out as my favorite for several reasons.
  • It's cheap: tortillas ($1), can of green beans ($0.50), can of cream of mushroom ($1), chicken breast ($4), and cheese ($3) all cost close to $10 total, and you won't use all of the ingredients to depletion (you'll have some tortillas and cheese and chicken left over).
  • It's fast: preparation takes 15 minutes, baking takes up to 30. You can have enough food for your friends/family in less than 60 minutes.
  • It's delicious: most people like cream of mushroom and anything that goes with it, so this recipe is sure to sit well among a general crowd.
  • It's hearty: a single serving will fill you up by itself, and just imagine serving this with a side like a salad or some bread!
If you live alone, this will make enough food to last you several days. If you have guests, it's the perfect dish as it'll serve quite a few people, especially if you double the ingredients and use a larger dish. I don't know how healthy it is, but it's certainly better than a lot of recipes that call for a lot of oil and butter (this one only calls for Pam).

If you like green beans and cream of mushroom soup, then you'll probably enjoy this recipe.

Thanks! It is really good, and the good thing is you can modify it however you like without really changing too much of the flavor.
