A Broccoli Revelation

This broccoli recipe literally changed my life. For years and YEARS my mother would stick broccoli in the streamer, turn the dial, and an hour later, the much forgotten broccoli, faded to grey, would be waiting for us, water down and absolutely horrid looking. Lots of butter and lemon hid the fact that the life had been evaporated out of the poor vegetable, but it didn’t make it any easier to swallow (actually I think the only real reason why I allowed myself to eat some much of it is that my mother told me that broccoli made my eyes sparkle).

When I started taking over dinner shift, I knew something had to be done about that broccoli. I started taking it out at the peak of doneness, right after it turned bright green to deeper green. I still lacked much flavor, but at least the texture was more appetizing.

I saw Giada de Laurentis roasting broccoli once on TV, and the concept and idea was so exciting to me, I could smell it through the television! I had to beg my father to go to the store so we could make some for dinner that very night.

The broccoli came out crisp, tender, and FLAVORFUL. It was so yummy! I ate almost the whole pan, not saving much for my family.

It really was a vegetable revelation. I know that it’s not as healthy as just steamed, but I’ll take a little mono-saturated fats for some flavor as well.

Squirt a little lemon on it too, if you're a lemon head like me!

This sounds delicious! I have never roasted broccoli before -- lots of other veggies and they always turn out great, but never broccoli! Thanks for the idea!

Ha, my mom told me that eating veggies gave me sharper vision! On days when I need lunch or dinner in a hurry, I actually just pop it in the microwave in a slightly closed microwaveable container, then I sprinkle TJ's parmesan cheese on it, which is pretty good. I've never roasted broccoli before though, nor have I ever put lemon juice on it, so I've got to try this! Thanks for sharing, Aria! :)

Great Review! I prefer roasting to boiling vegetables any day...If you use a sheet of aluminum foil, then you dont have to wash the baking sheet.
