Great Fare Whether you're a Vegetarian on Not

In the seventies I purchased both Vegetarian Epicure books and used them extensively–still do. So I was delighted to find a new VE book out by Anna Thomas. While similar to the old ones, the recipes here didn’t excite me in the same way as Thomas’ first two books (I should mention that I am not vegetarian, though I dabble from time to time and love tasty dishes, vegetarian or otherwise). I do, however, like the menus she has put together and her writing is clean and engaging.

This book is divided into seasons with dinners for each, and accompanying each menu is a page or two about the subject veggie. Example: under Fall and Winter there’s an article about roasting vegetables preceding a rustic autumn dinner which consists of roasted vegetables, rice pilaff, plum and walnut galette. In the actual menu section, Thomas adds an herb salad with a honey Dijon dressing plus apple, radishes and raisins for an interesting touch. And the pilaff is a brown and wild rice pilaff with a broth base. She suggests autumn plums for the dessert, but also suggests making a similar galette later in the season using apples or pears.

The book contains a wonderful selection of salsas, sauces and dressings, sorbets and ice creams. I am particularly intrigued by the Cassis Sorbet. Also, she offers a lovely range of interesting desserts.

Thomas explains that her first two books were produced when there wasn’t such a concern about the abundance of butter and creams in recipes. Now, cooks are more health conscious, so the recipes have been trimmed accordingly. But whatever your taste, this book has recipes to please most palates. Examples: Beet salad in Raspberry Vinaigrette, Onion and Thyme Flan, Chard and Parsley Frittata, Chilled Orange Slices in Grand Marnier and Cognac.

The recipes are not complicated. Some are rustic, others more refined. A lovely addition to the vegetarian bookshelf. Anna Thomas’ latest Vegetarian Epicure contains 325 all-new recipes. Enjoy!

This book sounds great! I know a lot of people who are put off by the idea of vegetarianism, but this book will probably make it sound more doable to them. Thanks for sharing!
