The Mojito has risen in the ranks to become of the most popular cocktails. It originated in Cuba, was second to the Daiquiri on Ernest Hemmingway's list of favorite cocktails and, since the 1980's, has become one of the more fashionable tropical cocktails. It's very simple, using mint and lime to accent the rum. Choose a premium rum like Cruzan, Appleton or Mount Gay for a spectacular Mojito.

Ingredients:

2 oz. light rum
2 wedges lime
2 mint leaves
1.5 oz. simple syrup
carbonated water

Preparation: Gently muddle the lime wedges, mint leaves, and sugar syrup together at the bottom of a highball glass. Fill the glass with ice, then slowly add the rum. Fill with soda and stir gently to bring the leaves upwards into the mixture.

Many variations on the mojito exist; most commonly with various fruits added.

The mintiest cocktail

The mojito is like five of my favorite things all mixed up in a cup. Muddled mint, lime, sugar, rum and a splash of bubbly-ness? It just doesn't get much better than that. I like my mojitos filled to the brim with mint. I always ask for extra mint. Make it a jungle, ploease! Mojitos are the theme of any summer party

Mojitos are a tough drink to get right- too much rum and it overpowers the drink and too little mint doesn't give the drink enough of its signature refreshing kick. It helps to use a mortar and pestly to delicately crush the mint leaves. That way, it helps to release the flavors of the mint as you stir it in with the liquid mixture. Hotel Figueroa in downtown Los Angeles makes one of the tastiest Mojitos I've had outside of any Cuban establishments.
