In Communities on Lunch, tags appear to the left side of the topics page. The purpose of the Tag Manager is to allow founders to shape the tone of their community by removing unwanted tags. The tags that remain act as a categories filter.
The Tag Manager can be accessed by a Community Founder from the "Manage Community" link. There, a Founder can filter out unwanted tags. Removed tags can be added back through the same page at any time, and will always remain on the topic when it's viewed on the mail Lunch.com site.
