Lisa Aston changes my opinion of vegetarian cooking. It is not bland and flavorless. Vegetarian cooking is creative, colorful and enjoyable to prepare. I could never give up eating meat entirely, but this book gives me forty-five alternatives for days when I don't eat meat. The photos in this book make me salivate. The creativity of the ingredients in these recipes make the dishes sound interesting. I have never eaten a veggie burger made with kidney beans, dates and couscous before. I love to eat burgers so this is definitely my favorite recipe. There is a recipe for vegetarian butter chicken. This dish is made with chick peas and tomato soup. I have never thought of putting these two ingredients together. Cottage cheese roast is another yummy dish in this book. This dish is made with cottage cheese, walnuts and onions. It looks just like a regular meat roast. I am a big fan of mexican food. There is a photo of a vegetarian chimmichonga. This is a hearty dish made with refried beans, mushrooms and rice. I love to eat pasta There is a recipe for a herb cheese and spinach pasta. This recipe looks very easy to prepare, that is why this dish appeals to me. There is a recipe here for cottage cheese roast. This is made with corn flakes, cottage cheese and onions. I don't eat cottage cheese, but this recipe looks so good that I would eat it. The most adventurous recipe in the book would be a Peruvian ceviche made with tilapia fish, peppers and onions. I have never had ceviche before. It would be fun to eat once to see if I would enjoy it. The ingredients sounds interesting, and I love to eat fish. This is the best vegetarian cook book I have ever read.
