@djevoke Thanks! These are helpful, esp. the "New England" version. However, I'm looking for something a little more "Old English". Not so much a "beer-batter" variety because I understand that seltzer water makes a better batter. Also, I've heard that the chips need to be twice-fried. I've got the dutch over on the burner. Any UK lunchers out there?

No worries and I found an English-Style Fish and Chips recipe from the Food Network that sounds a bit more your style (soda water instead of beer)! I may have to give these a try ;p
And I think that @jbeswick is from England- so you can ask him for a recipe!
