When I first visited Ireland a couple of years ago, I dreaded what I would have to eat. I thought  it would be dreary. Who's heard about Irish cooking other than corned beef and cabbage? Was I ever wrong! Irish cooks have embraced the concept of cooking fresh and organic.

Yes, the potato is still a staple and is served with almost every meal, but in wonderful and fresh ways. You will also get two other veggies on your plate as well which makes for a very balanced and flavorful meal.

Even the celebrity chefs are aware of the wonderful contemporary Irish cuisine - watch shows by Bobby Flay and Anthony Bourdain as they rave about the food.

I love Irish food! It really bothers me when people say they ate crap food there. I think you have to restrict yourself to fast food and dingy pubs to get away from the glorious options available throughout the country. Well said!

Oooh, I highly approve of fresh and organic! Were there any particular dishes that you enjoyed? I'm always looking for new dishes to try to imitate :)
