i made mac and cheese one nite, home made following gordon ramsays recipe, and it included white cheddar and some blu cheese, it was very good.

Good question, D. If you don't mind the powdered chemistry set that is Kraft, I like to add shredded cheddar, which goes all melty and gooey in the bowl. An added ingredient that you suggested many months ago was a dash of Tabasco sauce as you mix it all in. So Cheddar, shredded Swiss or that powdered cheese food stuff would be my choices.
