Menudo is a Filipino stew.  This dish is made of garlic, onions, diced pork chops, pig or cow's liver, diced potato, raisins, diced carrots, green bell peppers, soy sauce, vinegar or calamansi and tomato sauce, and seasoned with salt and pepper while it is cooked. Filipino menudo will usually contain tripe, though common variants will include chickpeas and red peppers.

You can always see this dish in almost all occasions, especially during fiestas in the different provinces of the Philippines. The dish is thought to be a variation of the Mexican Menudo, and evolved into a totally diffrent dish through the centuries.
