Long bean, bean sprouts, fried tofu and Emping (a kind of crackers) are what make this very healthy dish a delightful combination! When mixed with the special peanut sauce, it's heavenly! I didn't like this dish until recent years. For some reasons, I hate vegie in my younger days. Now, I love this entree. Sometimes I experiment it with different kind of vegie like carrots, cabbages and celeries. The most important ingredient is the sauce. If the sauce is great, everything taste awesome!
