Atmosphere: Casa Chapala is a fun and colorful restaurant, with two locations in the Austin area.  The location off Anderson Ln is a large space located in a strip mall, with many tables and booths.  Authentic Mexican artwork adorns the walls and the female servers all wear traditional Mexican skirts and blouses.

What we ordered: We started with the complimentary chips and salsa.  The salsa is spiced-to-order at your table-side by one of the staff.

The chips were thick and crunchy, with a distinct corn flavor.  In addition to the salsa, they were also served with bean dip.

I ordered one of the House Margaritas which was on special for Happy Hour.  Stomg and tart and just a tad sweet.

My companions and I also ordered the Queso Flameado as an appetizer.  This bubbly, cheesy treat makes me think of many trips to Mexico where I had the same exact thing.  This variety of white Mexican cheese along with Monterey Jack melts so nicely while still holding its form.  It was topped with chorizo and peppers and served with a side of flour tortillas, which are used to roll up the cheese.  So yummy!

For my entree I ordered the Carnitas Zacatecas, which I was nearly too full to eat by the time it arrived!  I did manage to make one delicious taco from the tender, marinated pulled pork and saved the rest for lunch the next day.

One of my companions ordered the Enchiladas Racheras, whcih are corn tortillas dipped in hot sauce and then stuffed with meats.  My companion chose to have a different filling in each of the enchiladas: cheese, chicken and ground beef.  They were topped with lettuce, tomato, queso fresco, and served with black beans and rice.

Another companion ordered the  Pollo en Mole.  This is a very traditional Mexican dish made with cocoa, cinnamon, cumin, garlic, and poblano peppers that give it a spicy-sweet flavor.  There were many pieces of white-meat chicken covered with the mole sauce.

Another companion ordered the Tres Leches Cake to share.  This was one of the better Tres Leches cakes that I have tried in Austin.  The cake was moist as it should be, yet still sort of spongy.  It was topped with a whipped topping and drizzled with chocolate sauce.  Great flavor and great consistency.

Overall Impression: I am glad a friend recommended that I eat at Casa Chapala, as it had excellent Mexican food and service that was exceptional.  There are many, many great Mexican restaurants in Austin and I would easily add Casa Chapala to that list.  Definitely try the Queso Flameado!
