This soup base does indeed make a lovely coconut ginger soup, and is much faster and easier than trying to make it from scratch. I was intrigued by the instructions for making this into a rice dish, but thought the results were underwhelming. While the soup has a wonderful flavor, the rice dish was rather bland and disappointing. Still, I bought this to make soup, and do love the soup it makes so 4 stars.
