This is a fairly simple sauce from a flavor profile perspective. It is dominated by sweet with a touch of tang and mild heat. In fact the piquant component is a mere 600 Scoville units, which is much milder than Tabasco sauce.
The pineapple gives this thick sauce the main flavor. This is a great condiment, but can also serve as the base of other condiments such as relishes and chutneys, or even used as a 'secret ingredient' in cooking. In fact, rubbing this into a choice piece of salmon or mahi mahi, then grilling is perfect. It's also wonderful with plantains (sweet or green).
I use it on a number of things. It enhances grilled or broiled eggplant (or other squashes like zucchini or yellow squash), and adds an amazing flavor to a tuna or egg salad. I also mix this with fish sauce and some chopped bird's eye peppers as a dipping sauce.
This is versatile out of the jar as a condiment, a topping of an ingredient/spice. You are only limited by your imagination.
