This is the sibling to a milder (but still respectably hot) sauce called Hot Caribbean Pepper Sauce by Tortuga. There are some major differences between the two sauces aside from the heat.
One of the major differences is this one has a much simpler flavor profile that is completely dominated by the pungent aspects. It's truly hot, but is a little sour with vinegar providing that flavor component. Another thing is this one has a strong, very pronounced bite unlike the normal slow burn and spread quality of Scotch bonnets. I am sure that is from the seeds that are suspended in this viscous sauce. There are spices that I cannot truly identify that do level out the flavor profile a bit. I am fairly sure that turmeric is in there because of the hint of bitterness. However, this is made to be hot, so do not expect any balance, nor completeness with respect to flavor.
Another key difference between this and the milder sibling is this is less salty. That's interesting because this brand seems to use as little sodium as possible. Since I am on strict restrictions that is a great thing for me. This sauce has less than half the sodium of the milder one (30mg vs. 65).
This sauce has a definite place in my kitchen. Indeed, both styles from this brand do. I love the heat from this when I am in the mood for something hot and biting, and the flavor from the other when I want food to be the center of my focus. Do note that this sauce must be refrigerated after you open it.
