I have no idea why I purchased this cookie sheet because there is no equation between me and baking. In fact, the only thing I am highly successful at in the baking arena is homemade pizza. This could be the reason I purchase my Wearever AirBake Sheet. I prefer a square, or rectangular, pizza instead of a round one, and this baking sheet seemed the perfect answer.
It measures 14" x 16" with a raised lip at one end. The other three sides have no lip on them at all which makes for easy removal of my finished pie. I would imagine it would be great for cookies as well, as far as removal, but that is something I'll never accomplish.
I like the fact that this is a good, sturdy sheet, made of steel. With the small raised lip for lifting, it carries the weight of a loaded pizza quite well. I just give it a light dusting of olive oil before rolling out my dough, and I've not had one ounce of trouble with sticking - even the escaping cheese, as sometimes happens with a pie.
The generous size allows me to put two personal pizzas on the same sheet to allow for different toppings. With the ‘air bake' system the pan heats evenly allowing the entire bottom surface to cook thoroughly. The 'air bake' process is two layers of steel fused together which allows even distribution to the cooking surface.
Clean up is incredibly easy. Dishwasher safe? They say so, but I clean it off with hot soapy water and allow it to air dry. I've had my pan for over 5 years and it has given me nothing but dependable performance. I have not had one burnt pizza that can be blamed on the pan. You cannot blame the pan for operator error and the occasion drifting off in the nap while the pizza is cooking.
