Cream Puff Recipe

Recipe for choux pastry filled with cream.
For the shell
  • 1 cup water
  • 1 cup flour
  • 1/2 cup butter (1 stick)
  • 4 eggs

For the filling
  • 8 oz. tub of whipped cream
  • 1 box of instant vanilla pudding powder
  • 2 1/2 cup milk
  • 1 tbsp. vanilla extract

Directions
Bring water and butter to a boil. Stir in flour until blended. Remove from heat. Add eggs, one at a time (this step is very important, always one egg at a time), beating well after each egg (use electric mixer). Whip until smooth. Drop large tablespoon onto ungreased cookie sheet. Bake at 400 degrees for 35-40 minutes. Will brown right away, don't take out early. Cool; slice tops. Remove any filament.  Mix all the filling ingredients together and fill shell, then dust with powdered sugar.

Cream Puffs in a Cinch (Can Be Made Sugar-Free, Too!)

This is a favorite of mine to make during potlucks and family get-togethers.  It's super easy to make, has simple-to-get ingredients, can be made a couple days ahead of time, and they look and taste great!

For the shell

Variations
I make these sugar-free as well for my low-carb diet or diabetic friends.  Just pick up some "light" whipped cream instead of the regular and use sugar-free pudding mix.   Instead of sifting powdered sugar on it, sift starch onto it.  Simple as that!  To make different flavored filling, just buy different instant pudding flavors, like cheese cake, custard, or chocolate.

whoa! How did I miss this review before?! This looks really good and nothing better than home made cream puffs, tho Beard Papa's are pretty good.

omg, I don't mean to diss my own cream puffs... but I love Beard Papa's and have to have a cream puff when I see one, which is pretty often in San Francisco!  Their cream puffs are amazing, and I love it when they have their seasonal pumpkin cream filling!

Quick question: By 1 tbsp of vanilla, do you mean vanilla extract?

I'm not very good at baking.. and I especially thought cream puffs were for chefs that went to culinary school and what not.. hahaha, but I might try this! Thanks for the recipe.. I'll let you know how it turns out!

@LingEatsCake: I actually made the ones in the picture. I always they they were complicated to make, too, so I was surprised at how easy it was to make, and how tasty and good-looking they turned out!
