For this popular vegetarian dish, you will need:

1 large eggplant, diced
2 medium zucchinis, sliced
1 medium yellow squash, sliced
1 large yellow bell pepper, chopped
1 medium yellow onion, chopped
3 cloves garlic, chopped
2 cups brown mushrooms, sliced
1 medium can diced tomatoes, drained
1 small can tomato paste
2 cups mozzarella cheese, grated
1 baguette French bread
0.5 cup red wine
olive oil, as needed
seasoning-basil, dash
seasoning-parsley flakes, dash
seasoning-ground black pepper, dash
seasoning-bay leaves, dash, crumbled


Preheat oven to 350 degrees (325 if using a convection oven). Place eggplant and zucchini together in colander, cover copiously in salt, and set aside for at least 15 minutes. Salt will absorb bitter juices. When finished, rinse with cold water and drain.

Prepare all vegetables as indicated, keep separate. In a large saucepan, heat olive oil and add garlic and onions. After they begin to brown, add wine, continue to simmer.

In separate saucepan, heat olive oil and add mushrooms. Cook for 3 to 5 minutes, stirring frequently. Remove, add to onions/garlic. Repeat process for bell peppers, then for zucchini & eggplant mixture, adding olive oil as necessary. When all ingredients have been added to onions & garlic in large saucepan, add tomatoes and tomato paste, as well as oregano, parsley flakes, bay leaves, rosemary, black pepper, and basil to taste. Simmer on medium-low heat, covered, for 5 minutes. Increase heat, remove lid, and allow any extant liquids to evaporate.

Scoop mixture into large casserole dishes coated with olive oil. Sprinkle with cheese, then place baguette slices on top to cover. Sprinkle with more cheese, place in oven. Switch to broil at 500 degrees for approximately 3 to 4 minutes, or until cheese becomes crispy. Remove, allow to cool several minutes before serving.   

Serves approximately 8.
