Spicy Vegetarian "Paella" Recipe

Vegetarian recipe

This is an inexpensive, simple to make vegetarian recipe created by a Spanish-food-loving-vegetarian who missed her mother's famous paella. You can find all of the ingredients at your local Trader Joe's or health food stores.

Spicy Vegetarian "Paella"

2 Tbsp. olive oil
1 medium onion, diced
1 green bell pepper, diced
1 box of Trader Joe's spanish rice
1 14-oz. can vegetable broth
1/4 cup water
1 can diced tomatoes, undrained
16 oz. Trader Joe's soy chorizo, sliced
Salt and pepper, to taste

Directions:

1. Heat olive oil in a large skillet over medium-high heat. Add the garlic, onion and bell pepper and sauté for about 4 to 5 minutes.

2. Add the rice and stir. Then add the broth and water and bring to a boil. Reduce the heat to medium-low, cover, and simmer for about 15 minutes.

3. Add diced tomatoes and soy chorizo and stir. Cover and simmer until the rice is tender and most of the liquid is absorbed, about 5 to 10 minutes.

4. Season with salt and pepper and serve

I made this recipe tonight, and I gotta say it took me back to my nights in Madrid last summer! It was hearty, spicy, and filling.

I must admit, however, that I decided to throw in some pre-cooked shrimp at the last minute, but all the other ingredients were the same. I just made it a bit spicier by adding paprika and crushed red pepper, and sprinkled with some more garlic. Hey! What can I say, I'm ethnic so I gotta add whatever spices are in my pantry!

As prepared, it could have easily fed 3 or 4 people. It was just my dad and I eating it tonight, and we had plenty left over (we ate it with some flatbread). Even if I hadn't  added the extra spices, it would have still been delicious but tangy. I also threw in a salad just in case things got too spicy.

If you don't mind spiciness, this recipe is for you. It only took about 20 minutes to prepare all the ingredients and cook everything. I served it straight from the pan and it was piping hot. A perfect recipe for when you want something quick, and it goes great with red wine.
