Less is definitely more at this highly praised and often talked about food stand in downtown PDX.
The one and done chicken and rice dish is perfected to the highest level. After watching an old Bourdain episode in Singapore where he had a similar experience, I think he puts it best "this dish is deceptively complex." It takes real skill/technique to have perfectly tender chicken, well balanced ginger/garlic sauce and delicately seasoned rice. On my first visit I had the dish as is, next time I plan to add liver or crispy skin to see if it clouds or enhances the dish.
I find myself often seeking out these one chef, one dish joints and food carts have made that more accessible and appreciated. In many of the negative comments I hear things like I wouldn't make this a stop for an out of towner, or I don't get boiled chicken, or the chicken has no flavor, clearly they don't understand the nuances of this stand and the dish.
