Last night I stumbled across a great food and wine pairing that I wanted to share.  It was one of those magic moments where the flavors and textures all came together and it just happened to be with our 2006 Wild Horse Bien Nacido Pinot Noir.

The earthiness of the wine and the silky Pinot noir texture was a great complement to the flavors and texture of the seaweed in my smoked salmon roll.  The finish of the wine has a great minerality that almost suggest a saltiness which paralleled the saltiness of the soy sauce and toasty oak stood up to the rich smokey bites of the salmon.

Below I have included our technical information on this wine.

This bottle of Unbridled Pinot Noir comes from one block within Bien Nacido Vineyards located in southeast Santa Maria Valley. Their sandy soils and close proximity to the Pacific Ocean allow the vineyards to naturally produce lower yields increasing the aptitude for concentrated fruit and even ripening. The cool climate that this vineyard experiences provides the ideal growing conditions for both Chardonnay and Pinot Noir vines to thrive and consistently produce high quality fruit.
This small lot of Pinot Noir from Bien Nacido Vineyards was fermented in 1.5 ton fermentation boxes. The must was punched down 2-3 times per day during primary fermentation. Each lot spent at least 10 days on skins to maximize extraction and achieve softer tannins. After pressing, each lot was then racked once from tank into 100% French oak barrels for malolactic fermentation and 10 months of aging. We selected only the finest barrels to produce an extremely limited bottling.
The 2006 Unbridled Pinot Noir from Vineyards is earthy and spicy, with underlying cherry and strawberry fruit tones. The mouth feel contains classic Pinot Noir fruit flavors of raspberry and strawberry complimented with hints of cinnamon and vanilla from 100% French oak aging. Lovely from beginning to end, pair this elegant Pinot Noir with pork tenderloin with cherry sauce or cedar planked salmon.

I am glad to hear an endorsement of Pinot and Sushi...I sometimes feel foolish suggesting a bottle of red to go along with the raw fish, but I really like the combo. This wine sounds great.

Mmmmm, you make this Pinot Noir sound mouthwatering!  It sounds like it would go great with bacon, especially candied bacon.  Thanks for sharing!
