FFV is the game that pushed me to come up with my #1 Rule Of Video Game Storytelling: If you have a good plot, you can spend time on it. If you don't have a good plot, don't spend time on it. If you don't have a good plot, but spend time on it anyway, you're going to annoy the player.
Sure, it doesn't have a good plot, but it doesn't need one. It can get by on gameplay intricacy and charm alone. Also, the Gilgamesh music is incredible.
One other thing to mention - the job system was adapted and influential on the FFTactics series, and that entire subgenre as a whole. It's also pretty similar to the class system of the PC games Wizardry VI & VII, two of the best system-based games of all time.
