What is Banana ketchup? A lot of people never believed me that such a thing does indeed exist, until I brought a bottle to work. It is a Filipino sauce that enhances the flavor of fried chicken, Asian Bar-b-qued kebabs, spaghetti, Asian omelettes (called torta), fish, fries and even meatballs. The Banana ketchup and banana sauce are colored ‘red’ to resemble ketchup but that is where all similarities end. Jufran is the most famous brand of the banana ketchup although I am not sure whether UFC actually invented the banana-based sauce because of Max’s fried chicken in the Philippines.
Since ketchup is mostly based on tomatoes, banana sauce and ketchup is made from mashed bananas, vinegar to give it a tangy taste, some salt, spices and garlic powder. There is also a spicier version of the sauce that is labeled “hot” and it’s not kidding. If it is hot, it is really hot! The sauce is pretty cool at a mere 40 calories and is being exported to different countries such as the U.S., Kuwait, Hong Kong, France, Saudi Arabia, England and Switzerland.
I love this banana sauce when I dip fried chicken and use it as an ingredient to marinate my pork ribs; it even works with lumpia when I am feeling lazy to make the lumpia sauce. Most Filipino households use it to enhance their spaghetti (to make it sweeter) but I like my pasta dish more Italian authentic. The banana ketchup is great with hotdogs and seasoned burgers--have you tried seasoned hamburgers cooked with the sauce? If you haven‘t, it is awesome! I have to tell you, this stuff makes fried chicken more finger-licking good! I guarantee. Oh, when I say fried chicken it is the stuff with no flour or any other dressing to make it bigger. Just straight-up marinated chicken boiled and then fried to perfection. (want the recipe?)
There other different brands of banana ketchup and sauces--the most popular being JUFRAN, UFC, Manfran and DEL MONTE.
Jufran works well with pork chops too!
Fried Chicken recipe:
Not sure if you’d like to take out the skin but I usually leave some on for taste. Make sure the chicken is thoroughly defrosted. Marinate the chicken hindquarters in 80 % lemon juice and 20 % fish sauce. The chicken has to be halfway or fully immersed in the marinate. Dash the chicken with pepper and refrigerate overnight. (preferable but 2 hours is fine). Boil the chicken in a pot for 20-25 minutes (depending on how many pieces) with pepper, a teaspoon of salt and garlic powder. Take the chicken out of the pot and put some margarine (Dairie Kreme works well) or butter. Fry it, (not totally immersed in oil) turning it over once but make sure you cook it evenly. This chicken tastes so good with Jufran!
