Gluten-Free Diets Don't Have to Be Taste Free!

Carol Fenster's '1,000 Gluten-Free Recipes' is my new favorite companion in the kitchen. Chock-full of wide-ranging recipes, her specialty cookbook has driven me out of the rut of either below par tasting alternatives and/or expensive gluten-free products.

From gluten-free waffles to pies and other desserts, Dr. Fenster manages to give a full repertoire to what we otherwise think is a restricted diet. Even cookies, casseroles, and quiches are presented with a wide-variety of ingredients and recipes. It would be enough to have her bread, muffin, and bagel recipes, but she also has variations for tacos, meat loaf, and other entrees.

I received this book as a Christmas gift, and it has changed my life. Not much of a dessert person, I have enjoyed fresh oatmeal raisin and peanut butter cookies from her helpful recipes. Relying on her formula Sorghum blend, the ingredients employ cornstarch or potato starch with sorghum and tapioca flours. The result is a much sweeter taste than some gluten-free flours which have the bitter aftertaste of bean flours.

It takes the creativity and expertise of someone like Dr. Fenster to make gluten-free diets a far less cumbersome lifestyle.
