Dark Delight!

I like my chocolate dark. Not too bitter, but well balanced with a lightly sweet and creamy texture. I lost my taste for milk chocolate long ago. These bars are not on the same level as plain cocoa nibs, but they do have a *kick* to them.

That isn't to say that the Extra Dark Chocolate 82% Cocoa bars are that bitter, but they are not your regular mass produced dark either; like those with 65-75% cocoa levels. This is a bar for those people that treat their chocolate consumption like that of fine wine. Every nibble is to be savored. Small bites melt on the tongue and give a richer experience that let the eater discover the subtleties that abound in fine Scharffen Berg chocolates. Cramming them into your mouth like a Wonka Bar should NOT be an option.

As the company description goes, the 82% Cacao Extra Darks are like a fine red wine. A Cabernet perhaps. They have a sweet plummy/pruney scent that translated to flavors of fig and date on the tongue, finishing with a hint of coffee and faint spiciness that had me checking the ingredients for chili peppers. They are a bit dry at first nibble, but become creamier as they soften in the mouth. Every slow and savored bite offers up new dimensions of flavor. I wouldn't recommend eating or drinking anything while enjoying one of these bars, but if you did, perhaps a nice cold sip of milk between bites would expand and spread out the flavors a bit.

Scharffen Berger chocolates are considered one of America's finest chocolates with good reason. They are a bit more expensive than some other top shelf chocolates, but in my opinion are worth the slight premium. Lovers of dark chocolate should enjoy taking it to the edge with this 82% cocoa creation.

I am a dark chocolate lover as well -- the very best I've ever had was German dark chocolate; an online friend from Germany sent me a huge box of candy and most was dark chocolate that, like you said, must be savored. I've never had chocolate taste that good and it was in all shapes, forms; bars, sticks, and so many I can't remember. I'm looking forward to her sending me more but I'll have to try and find the kind you recommend. Thanks for sharing!!

That's exactly how I like my chocolate as well! Sometimes, I can actually do without the sugar and just have straight up chocolate. I may have had Scharffen Berger before, but I think I better pick up a bar just to make sure ;)

Once you get used to the taste of the dark stuff, milk chocolate tastes like crap!!

My tastes have changed over the years. Milk chocolate is okay, and every now and then white chocolate is a treat, but DARK is my go-to choco! :P Thanks for the feedback ladies!
