I ran into Sprinkles Red Velvet Cupcake Mix completely by accident at Williams-Sonoma. The instructions were straight forward and the final result was very good. They include a very simple recipe for cream cheese frosting that is way too sweet for my taste. About half the powdered sugar that is called for is what I recommend. Certainly not as good as letting them do all the work in their bakery, but it's a nice way to have a convenient fresh-baked treat at home.
