A filling and delicious vegetarian brunch dish.

Eggs florentine is definitely my favorite brunch item.  Nothing hits the spot quite like toasted, halved biscuits topped with fresh spinach and poached eggs, then doused with a buttery Hollandaise sauce.  A side of rosemary potatoes or potatoes O'Brien goes perfectly with this dish.

As someone who doesn't eat pork, yet loves Hollandaise sauce and the concept of the eggs benedict, I sure do love and appreciate eggs florentine.  It's pretty much like an eggs benedict, except the ham and/or bacon gets replaced with spinach, making this dish a bit healthier, and vegetarian-friendly.

Now that I eat chicken, I really should check out that chicken florentine! Surprising how... short this is, right? Not that short is necessarily bad, but I've gotten so descriptive and wordy over time! Thanks for digging this up, Woo, maybe I'll start writing some short and sweet reviews again. And do I wanna know what you're up to? :P

@HealthyRache - I've heard of the wonders of eggs florentine for quite some time, yet have only seen it on the menus of few restaurants. I've tried to make this myself a couple of times, but have decided that it's not worth it and that I'm better off getting it at a restaurant. Poaching eggs and making Hollandaise sauce just isn't for me. My favorite place to get this at a local San Francisco cafe chain called Squat and Gobble. They serve it breakfast, lunch, and dinner!

I LOVE eggs florentine. The first time I had it was at some cafe in Santa Monica. I think it was Marmalade? No wait, maybe somewhere in Westwood. Anyways, delicious!

Eggs Florentine is a variation of Eggs Benedict that substitutes spinach for the ham. Older versions of eggs Florentine add spinach to poached or shirred eggs Mornay – eggs covered in Mornay sauce.
