The one sandwich I'll eat without mayo.

I love ice cream sandwiches, and yes, they are the one sandwich I'll eat without some sort of may-based sauce or dressing.

The first time my sister and I heard of ice cream sandwiches was back when we lived in Maryland in the early 90s. My mom said she was going grocery shopping and that she was going to get them for us. However, my sister and I glanced at each other with looks of disgust, both of us picturing two slices of bakery bread with lettuce, tomato, turkey, mayo, and ice cream inside. How gross, we thought.

Boy were we wrong.

I'll never forget my mom taking out the box of ice cream sandwiches from the paper bag. My sister and I instantly realized we were wrong, way wrong, and literally lost control of our bladders in our excitement. The box was finished several hours later.

Since then, I have made a point to keep ice cream sandwiches inside the freezer at all times. The only time in my life when this was not possible was freshman year of college, when I knew my roommate would most likely devour them all in several minutes. But sophomore year in my own apartment? God help you if you'd taken up precious room in the freezer for other, useless items like meats, vegetables, or nutritional foods.

My favorite today is still the traditional kind: vanilla ice cream served between two thin slices of chocolate bread. Now and then I'll buy other kinds if they've been slashed in price, but regardless of taste, size, or brand, ice cream sandwiches will always have a special place in my heart. Oh, and did I mention they're loaded with calories? Now that's my kind of food!

My top five icecream sandwiches: 1. Classic Carnation/Nestle brand vanilla/chocolate 2. Its It. Vanilla icecream between 2 oatmeal cookies and drenched in chocolate. 3. Oreo Cookies and Cream. Cookies and cream icecream between two huge Oreo cookies. 4. Skinny Cow. Lowfat soft-serve icecream between chocolate wafers. Good for your tummy, and your conscience. 4. Tofutti Cuties: Believe it or not, these non-dairy, soy-based mini treats are actually very good. Mint chip is my favorite. You know what I miss most about SoCal, having lived in SF for the past nine years? Ice cream trucks. We don't have them in the city. My kids are missing out. When we go down to my mom's, we get more excited than most to hear that tinkling music coming up the street :-)

Ice cream is simply divine. Placing a bed of it between two crackers is a good idea in theory, but make sure you're in a cool place because that stuff will melt and leak all over the place in a real hurry. Unlike cones, there's no base you can really use to salvage the melted ice cream in an ice cream sandwich.

Yummy, but full of such bad things, at least for me.

Ice cream sandwiches are a right of summer.  Making them may seem a daunting task, but they are actually pretty simple. You can use all of our brownie mixes to make them, giving you all sorts of options (like mint or peanut butter) for making your own mark on this warm weather favorite.

Another very versatile and creation theme ~ Try vanilla ice cream and chocolate chip ice cream on graham cracker for a S'more Salute to Summer! I love to make homemade chocolate chip cookies and sandwich homemade vanilla ice cream inbetween.

Pretty good. But only when I'm in the mood. Sometimes they just taste fake.

Simple, delicate and delicious. Best part is licking chocolate off your finger tips at the end.

I don't know who invented ice cream sandwiches but I'd like to kiss them right on the lips.    There's not much that can beat the traditional chocolatey, flexible cookie with vanilla ice cream in the middle.  No other sandwich can compare.
