When it comes to desserts, Thai desserts probably rank the most exotic, colorful, adventurous & exciting in the world. Looking at Thai dessert buffet spread alone (yes, there's one as the Thai people do love their desserts and many Thai restaurants do offer dessert buffet) is enough to make one salivate like Pavlov's dog, not to mention eating them.
Thai desserts are not limited to restaurants. One can even find them on the streets by street hawkers. The Look Chub is often spotted on the streets. They are shaped like fruits and vegetables but are made from steamed green bean paste and is a little too sweet for my taste. However, they look so enticing that most first time visitors to Thailand can't help but take a bite at them!

One of my favorite fruits is Mango and a good Mango will definitely leave a lasting impression. This is also one of my favorite desserts, not that I care much about the sticky rice. Still, it's quite a combo to have them side by side and eaten together. Try it, I think you'll like it.
As with Indonesian dessert, Thai dessert uses a lot of coconut milk too. This may be a little harder to prepare at home unless you've domestic helper. The best desserts are made from freshly squeezed coconut milk. Yes, freshly squeezed and not just a carton of prepackaged coconut milk that's available at most supermarkets. I think that's one reason why the Kolak I've had at home when I was a child was so good. It's because they were made from fresh coconut milk!
Thai Mix Dessert
Red Rubies is another of my favorite Thai desserts. These are mocked pomegranate seeds made from water chestnut. They are crunchy, colorful and soothing to the throat. Served cold with ice, it's the best Thai dessert in the warm and humid weather of Thailand.
Tab Tim Grob (ท้บทิมกรอบ - Red Rubies) Ingredients 1 cup water chestnuts 1/2 tapioca flour 1/2 cup sugar 3/4 cup jasmine essence water 3/4 coconut milk red food colouring crushed ice
1. To make the jasmine essence water, soak the jasmines in the water in a bowl overnight close the cover.
2. Slice the water chestnuts in dice shape and soak in the red food colouring and stir until bright red. 3. To make the syrup. Boil sugar and jasmine essence water. Leave it to cool.
4. Put the flour in a plate and add the water chesfnuts and shake so the pieces become well coated.
5.Heat 5 cups of water to the boil, add the water chesnuts. It will float when cooked and look like rubies. Drain and plunge in cold water immediately.
6. Serve a little water chestnut into dessert dishes, add syrup, coconut milk and ice

Need I say more after all these pictures? They are such delightful desserts to look forward to after each Thai meal. Well, be forewarn, you will definitely want more. The trick is to not have to full a meal so that you've some space left for these delightful sweets.
