English muffins that aren't too dry or too thick!

I just bought Trader Joe's gluten- and dairy-free English muffins, and am so happy with them. I like them better than Kinnikinnick. They are similar to Glutino English muffins, but are dairy free. Unlike Trader Joe's French rolls or the By George brand of muffins, which are dry, thick and hard to swallow, these are thin enough and moist enough to make one of my favorite breakfasts: a fried egg sandwich with cheese.

The ingredients are: water, white rice flour, egg whites, tapioca flour, soybean oil, soybean flour, guar gum, sugar, yeast, salt, corn meal, distilled white vinegar.

If you can eat soy and eggs, I highly recommend these muffins.
