The Bottom Line: Although heavy, this pan is excellent for pizza, stir fry and cake baking. A fantastic addition to any kitchen, you can not get the same results with any other cookware.
I was so thrilled. A ceramic pizza pan. Wow. We had stepped up in life.
I have the best cookware available. Neova. Other than Neova, I have a whole set of everything you could imagine in cast iron. And then some.
I am so thrilled that I could not contain my ravings in this small opinion.
But the arrival of the ceramic pizza pan was the finishing touch on our cooking repertoire. We had an enamel pizza pan, but it just did not make good pizza.
For a year, we enjoyed our ceramic pizza pan and the crispy crust it made. It was kind of small, but it was a handmade rarity to have.
Then the place where we bought it went out of business. And lo and behold, the pan we had come to love suddenly exploded in the oven one day. It cracked in half while baking pizza.
OH NO! Now WHAT????
We had given up on pizza other than small tiny pizza made in our Lodge cast iron pans. They were too small though and had to be made in shifts. Still, it was really good pizza.
Then it happened.
We were walking through Walmart one day and on my favorite clearance rack was a pair of enormous cast iron skillets. I was ecstatic. They were bigger than our beloved pizza pan that was a thing of the past!
The cost was unbelievable- only $10 and I talked my husband into buying it. I knew that these went for close to $40 and I was bound and determined to have pizza again.
So we bought it and have been thrilled ever since.
Yes, it is heavy, but well worth the price. The pizza is fantastic. Better than our ceramic treasure!
Specifics of this pan
The pan is 20" across and is about 2 1/2" inches deep. It is about 25 lbs. heavy , but well worth the weight.
It is flat on the bottom and has a looped handle from which you can hang it on a heavy duty hook in a basement stairway or other place where you can put such a hook that can stand the weight.
What we use this pan for
This pan is primarily used for 3 things in this home.
1- PIZZA! This pan makes the best pizza I have ever had. Crispy bottom, yet bread like crust. It fits in our oven with no problem and the cooking is even. Just can not make the crust too thick or have the oven too high. 400F is plenty and only for about 14 minutes. Depends on your oven.
2-Stir fry. This pan is perfect for stir fry. You can put aside the vegetables that are more done and put the ones in the more direct heat that need more cooking.
Burners on the stove only cover a small part of the pan, but it is spread to the perfect temperature variance. The vegetables toward the outside are kept warm while the others are better done.
3-Cakes. This pan makes the best cakes. It is only one layer, but if you love pineapple upside down cake, then this pan is for you. It easily makes cake to feed a hungry crew and the cake is done perfectly.
We turn our oven down 25degrees from the recommended recipe. You need to preheat the pans in the oven before pouring the batter in them for a perfect finish to the cake.
I am getting hungry just talking about it!
What do you need to do to maintain this pan?
The first time that you use this pan, you need to wash it well with warm soapy water.
Place the wet pan in the oven to dry and then take it out for a moment to season it.
After your pan is out of the oven, gently rub either lard or crisco type shortening all over the pan, both inside and outside.
We do not use either of these products for cooking, but find that they work best for the seasoning of the pans. They do not wear off as much.
Place the pan in a 350F oven for about an hour or two. Then let the pan cool in the oven.
Once cool, the pan is ready to go.
Either wash the pan in warm water, or quickly wash with slightly soapy water if very sticky or dirty.
Place in warm oven to dry and recoat with shortening or oil just to keep from rusting.
After time, the pans will make their own stick free coating.
We have used this pan and others like it for many years. Along with the Neova cookware, our kitchen is complete for any baking or cooking need we have.
Yes, they are heavy, but with a little maintenance of hand strength and body strength, you can use these for a very long time.
Many an old time grandmother used these well into her later years.
