Perfect for soft cheeses

Note: my knife came with a value-priced set - Wusthof 4-pc. Gourmet Wine and Cheese Set - that was actually priced below the price of the knife along (at the time of this review).

The knife is designed specifically for soft cheeses such as Camembert and Brie, but it works well with cheeses such as gorgonzola and other blues too. What I love is the balance, the sharp blade and the hole pattern that keeps very soft cheeses from sticking to the blade. The product description on this page claims that this is a forged knife - it's actually a stamped knife made from 'forged' steel. That is not a detriment since stamped knives are perfect for cheese and other lighter uses.

Total length is about a quarter inch short of ten inches: the blade is five inches with a poly handle that is 4.75 inches. This is a razor sharp knife that needs to be handled and stored with care. While this is claimed to be dishwasher safe I recommend against that. I hand wash mine and towel dry it.

Bottom line: this is a quality knife with a well thought out design for its intended use. Moreover, it is a beautifully constructed piece of German manufacturing and will last a lifetime with proper care.

The flat broad end works well for scooping up a soft piece of ripe Brie. Traditional in look, Classic knives are seamlessly constructed with a visible full tang triple-riveted into an ergonomically-shaped synthetic handle.
