Pizza the way it otta be..... Old School!

Di Fara's Pizza located in Brooklyn, NY is as legendary as Yankee Stadium itself.  Domenico De Marco has been making his pies here for over 40 years and I don't think a whole lot has changed since the first pizza he made.  There are a lot of reasons not to go here: it is located way out in the middle of Brooklyn, you can wait up to an hour for a single slice, cash only and closed on Monday and Tuesday and the place is downright filthy.  BUT, if you are a true fan of the pie, you will find Di Fara's is "Well worth the price of admission".

Let me set the scene.  The place is a tiny corner pizza place with a "Soup Nazie" feel.  As I waited in line I made several observations.  First, Domenico is getting up there in age and no matter how long the line is he operates at one speed.... SLOW.  The basil used to garnish the pizza is grown in the front window and his daughter takes the orders and works the cash register.  Domenico just keeps making pies one after another and based on how many people are waiting for a whole pie he decides if the current pizza coming out of the oven is going to be sold by the slice or if he is going to give the whole pizza to someone who ordered a whole pizza. 

Now for the pizza.  The menu reminded me of In N Out.. straight up simple.  He offers a "Regular" pie and a "Square" pie,  I recommend the regular pie, aka Neapolitan.  He uses OO flour to make the crust and imported San Marzano tomatoes for the sauce.  The fresh mozzarella is apparently from the Italian village he is from and that is how the pizza goes in the oven.  When it comes out it is sprinkled with hand grated Parmesan (also imported), drizzled with olive oil and garnished with fresh basil cut into small pieces.  The pizza was divine, I only wish I had a glass of Chianti to wash it down.

Brooklyn has such amazing food.  And I don't know why, but I totally love places with a Soup Nazi feel!  The way that you describe Di Fara reminds me of The Cheese Board Collective in Berkeley.  They seem to rarely ever be open and on vacation all the time, only serve one kind of pizza, yet people flock to them.  In fact, I might just have to go there to do research for my review of them this afternoon.... Thanks for the inspiration, and great review! :D

great review,,, i can't wait to try this place out next time in brooklyn... you had me at "the basil is grown in the front window".. sounds like one can have a pretty nice day in brooklyn mixing in a pie at di fara's, then washing it down w/ a steak at peter luger's :-D
