There's no crap coming from this Pigeon

 Le Pigeon is the epitome of the modern day food scene in Portland, small communal tables, quaint rustic decor, well educated (and talented) staff, seasonal menu, and tattooed Chef.  The only drawback is the price, definitely on the high-end for PDX but worth every penny.  There also seems to be a trend in viewable kitchens which I love, if you can get a seat at the bar/kitchen, you'll enjoy an education highly skilled cookery.

- The Food...
I went twice roughly a month and a half apart and the menu (with the exception of desert) was all new. 
Chantrelle Mushroom soup - spectacular flavor profile not overly creamy and lovely subtle mushroom flavors with the most amazing candy cap dipping sandwich with the most unreal crispy buttery sweet texture, sinful!
Radicchio Caesar style - This could be my new favorite caesar salad, better than the table side preparation which previously held the crown.  I was amazed that the radicchio was not bitter, in fact it enhanced the flavor of the the salad, along with the perfect balance of aioli, garlic, and parm.
Ricotta Gnocchi with goat - delicious, but definitely ordinary compared to everything else.  Gnocchi was light and airy which shows their technique is solid.
Lamb Neck w/ lentils, eggplant, yogurt - when I tell you this is the most incredible lamb preparation I have ever had, know that I have had my fair share of plates with this animal.  First the lamb was deep in flavor and fall off the bone tender, the combination of the eggplant lentils and tzatziki style yogurt blew my mind.  The other members of our party agreed.  Get it, you won't be disappointed.
Black Cod, black garlic and clams - perfect! seriously the sauce the fish, they are a match made in heaven. 
Foie Gras Profiterole - This is as sinful a desert as I have ever had.  Every part of this signature classic is made with foie gras, first the cream filling is foie, the pastry is made with foie, the caramel sauce is made with foie, and finally the confectioner sugar dusting is made with foie... They had paddles on standby for a stoppage in blood flow... OUTSTANDING!

Beg, borrow, steal to get a spot at this Portland jewel.

Ugh, this sounds absolutely amazing.  Especially the foie gras profiterole!  Never heard of anything like it.  Is that duck confit in that photo?  This is definitely on my must-go list for the next time I'm in Portland!  If you're ever in the San Francisco Bay Area, you should check out French Laundry and Boulevard.  Those are my two reviews of them.  They may cost a pretty penny, but the food and overall experiences are amazing.
