Eat Organic. Believe in Sustainable. Buy local. Eat fresh.

This is the mantra of the new Paul Martin American Bistro that opened on February 28th, 2009 in El Segundo, CA. Started by Paul Fleming ( of Fleming’s, Ruth Chris and P.F. Chang fame) and longtime restaurant partner Brian Bennett, this new addition to the family strives to balance fresh, organic foods with a comfortable, cozy atmosphere. Styled with a beautiful, sophisticated interior, the restaurant features dark woods, exposed brick, soft lighting and polished concrete floors. The airy and spacious floor plan is great for dinner, a business lunch or meeting friends for impromptu drinks at the bar.

The menu, which took Brian and Paul over a year choosing the sources, feature 80% from local Northern California producers. Each source is natural, organic and several are independently owned. Most dishes are moderately priced, from $10-$22. The pre-opening featured the full menu and the extravagant wine and cocktail list. During the soft opening, for the appetizer we tried the smoked salmon lettuce cups, which was light, smooth and topped with apple slices and coming with a delicious cream sauce. Main courses included the New York French dip, and was served on a thick, freshly baked roll brushed with garlic butter and thinly sliced meat that melted in your mouth. We also tried the St. Louis style pork ribs, which came artfully stacked like towering dominos on your plate, next to a massive pile of apple slaw and a barbecue dipping sauce. With hardly any room left for desert, we opted for the homemade ice cream. Three scoops include vanilla, chocolate and pistachio with the best ever shortbread cookies.

Now, almost a year later, I think I have tried nearly everything on the menu. I still opt for the appetizer-sized St. Louis style pork ribs, but pair it with either the spinach salad or the butter lettuce salad. The skirt steak is another great option, as is the spinach and artichoke dip.

There is a new king on Rosecrans Ave!!! Their seasonal heirloom tomato salad (capitalizing on the best seasonal time of the year for heirloom tomatoes, purchasing them from local farmer's markets) was the deciding factor in leaping Houston's for the top spot on Rosecrans.. Since its opening in Feb, 2009, i have definitely frequented this restaurant more than any other (and that goes for all streets).. I love the organic, sustainable fresh local product focus and they did a very nice job with the …

Good food, quality local ingredients, but something is missing still. Hope they put it all together.

El Segundo, California
Paul Martin's American Bistro

2361 Rosecrans Avenue
El Segundo, Ca 90245

With Paul Martin's American Bistro, Brian Bennett and restaurateur Paul Fleming, have realized a long-nurtured dream to create the restaurant "we've always wished was in our neighborhood." With the success of the original location in Roseville, the team has expanded with its second location in El Segundo.

At the heart of all great food is fresh, local, peak of the season ingredients. Paul Martin’s aims to take diners back to the farm with meat raised in a humane and wholesome way, locally sourced organic produce, the best of both wild and farmed fish, artisan cheeses and cured meats from small local purveyors. Brian and Paul spent more than a year handpicking the sources for Paul Martin’s menu. The thorough search produced 40 partnerships with thoughtful, local farmstead producers, 80 percent of whom are located in Northern California.

“Eat organic. Believe in sustainable. Buy local.” is the mantra of Paul Martin’s. As much as possible, that’s what Paul Martin’s aims to deliver, and at accessible prices, with plates priced mostly between $10 and $22. The menu promises such mouthwatering dishes as: Cedar Planked Salmon baked with shallots and bacon, sautéed spinach and crimini mushroom jus; brick chicken from Petaluma Farms with mashed potatoes and fresh herb jus; and ...
