Spinach frittata
1 onion
Oil for frying
Sprinkle of sesame seed
2-4 eggs
1-2 potatoes
Big handful of fresh spinach
2-3 slices of ham (optional)
1 clove of garlic
Fresh oregano / basil
Salt and pepper
Fry the chopped onion in oil. Add a sprinkle of sesame seeds. Skin the potatoes and chop them into small pieces and fry with the onion. Beat the eggs in a bowl. Add the spinach, garlic, ham and herbs when the potatoes soften. Pour the eggs over the mixture and cover with a lid. When the eggs are cooked through, turn off the heat. Serve with fresh salad or homemade bread.
