I'm old school- so it's the original Legends of Zelda or Mario Brothers! I don't think I've played a video game that would injure my hand since...thanks to Wii and XBox Kinect, now I'm more likely to become a cripple after one too many MJ Experience or Just Dance battles LOL
Crash Bandicoot -- I've played "Warped" so many times my hand goes completely stiff and numb - I love it!! The more intense the level is, the harder I press the controller. It's sad when you think about it..LOL
For the N64, Perfect Dark -- we never played the campaign, just the deathmatches. You could add up to 8 bots and set skill and personality levels for each. It also kept host of a series of stats: ammo efficiency, headshots, kills/death ratio, time, distance run .. Before we finally packed it away for good, we had played in excess of 14 full days. No game since has had the deathmatch flexibility for people that don't want to be online for every game they play.
For Xbox ... Halo, for Xbox 360, Halo Reach -- The first Halo is why we opted to get the Xbox over the Game Cube or PS3 which were all released at the same general time. It is a game that kept on giving. The only reason we don't fire it up any more is that Halo Reach is to the 360 what the original Halo was to the original Xbox, something so perfectly tailored for the platform and the ten or twelve gamers like me and my game buddy.

Basically every single next generation fighting game! Have you seen the moves list for these fighters in this day and age? It can take months to master all characters along with combos, chains, air juggles, block parries, etc. I still haven't gotten around to a review on the last Mortal Kombat game. So, my answer is the next gen fighters from Tekken 1 on up, to every single thing it managed to influence.
Mario 64. Wall jumping and several other moves did me in when he is in the sky world. Used to hate racing the penguin down that long slide but it was necessary to get that elusive star.
Long story short, Privateer on the PC. Going into the final missions, any hint book wants you to use the fighter craft with 4 specific guns, shields and missiles. I perfer to stick with a more sluggish ship with thick armor and my torpedos since they kill. Try and try after try I failed and whats worse is that you can had to TRAVEL to get to the mission itself only to be killed. After a PC crash I finally pick up the game a year later and BACK to that same mission with the same equipment and again, fail repeatedly. I FINALLY cave in, buy the fighter, the 4 guns, the computer and shields, missile launchers and missiles and guess how long it took to complete this time?
