I have some diverse choices. It's difficult to pin down the absolutely top 10 of all time but here's what came to mind. In no particular order and with some thought to psychological tension, especially in my first choice. Please note some of these are gorey and not safe for work consumption or very genteel sensibilities:
V for Vendetta - so much action in this film but there is a climax!
Undiscovered Country - Star Trek IV only Klingons and Shakespeare can outshine William Shatner
Kill Bill Volume I - The Bride vs. Gogo Yubari
Chinese Connection - Bruce Lee versus the Japanese School
La Femme Nikita - the original femme fatale
Cradle 2 the Grave - Jet Li cage fighting MMA guys with a midget, but really it's pretty impressive
Aliens - so many good scenes, it's too bad this clip cuts the battle short
The Duellists - Ridley Scott and Harvey Keitel! This is one of my favorite film scenes.
Bad Lieutenant -Harvey Keitel versus himself
Ong Bak - Tony Jaa fighting everyone, their mother, and somet batshiat crazy dude

Loved your choice of the Japanese school scene from CHINESE CONNECTION/FIST OF FURY. I prefer that film to ENTER THE DRAGON for reason I explain in my first review for Lunch. I also liked ONG BAK more than THE PROTECTOR because the latter had far more stunt work than the former, although that final scene in PROTECTOR was certainly kick-ass. I don't think I've ever seen that many breaking techniques all in one place before. I'd have to throw in a few old school m/a flix myself, I just never got into all that wire work.
I'm also rather fond of some of Jackie Chan's fight scenes!

Have you seen the "Police Story" films. In my opinion those are Jackie Chan's finest films, both as far as the story and the action goes. They're much better in the original Chinese. When they're dubbed it often comes off as being quite silly because the voice over actors aren't very good.
Also a very nice list. I may have to weigh in on this and see what my top ten would be. Truthfully, I'm not entirely sure at the moment. It will take some careful deliberation.

The Wild Bunch (1969) The final gunfight inside the Generalissimo's compound as Lyle, Tector and Pike take turns firing a Maxim Machine Gun, blood and bullets fly and the corpses pile.
